The Power of the Exotic
Considered one of best all-natural sweeteners, agave (uh-gay-vey) nectar can be used as a healthy replacement for table sugar. Found in most natural food stores, the energy-rich nectar, or syrup, is about 90% fructose, making it a low-calorie alternative. With a low glycemic value (meaning it is absorbed slowly into the body) it is great for diabetics.
The sweet, sticky juice comes from the agave plant. Actually a spiky-leafed member of the lily family, not a cactus as it appears. The ancient Mexicans considered the plant sacred (purifying body and soul). There are 136 known species of agave. The most well-known, Blue Agave, is what all tequilas (that fiery beverage consumed by week-long tourists in Mexico and drunken undergrads) are derived from. Salud!
In recipes, use about 1/4 cup of agave nectar as a substitute for 1 cup of table sugar (so, you use a lot less). Hmm, this sounds good. Try these excellent POWER BARS or, simply drizzle over, fruits, yogurts, pancakes, waffles, and cereal.
